Cream of Everything Soup Mix

Cosy, Creamy, and Cheap!





First - let's get to the recipe and then if you want to hear my witterings you can dive in once you know if this is for you ... don't you hate it when you click on a recipe and there are forty paragraphs to wade through before you can check you have everything you need to begin??



To be honest this is less a recipe and more an assembly job. Measure all the ingredients and then shake them together into a jar .. and .. erm! Done!


INGREDIENTS


  • 2 Cups dried milk powder
  • 3/4 cup cornflour
  • 2 tbsp chicken bouillion powder
  • 1 tsp onion powder
  • 1/2 tsp thyme
  • 1/2 tsp parsely
  • 1/2 tsp basil
  • 1/2 tsp black pepper



I guess the more exciting part is how you can use this floofy powder to create a warming bowl of soup from a handful of "something" and stretch your leftovers into feeding you for yet another day.



METHOD


  • One-third of a cup of the powder
  • Two cups of water
  • A half cup of your "something" to flavour your soup


For lunch today I fancy cream of celery ( cos there is always some celery lurking at the bottom of my fridge waiting to go to waste)


So I chopped up two ribs of celery into fine dice and softened by stir-frying in a little water in a pot.



Tip into a bowl and set aside whilst you make the base.



Add the powder and water into the pot and whisk until it comes up to a simmer.



Add the celery and cook for another 2 minutes to heat the veggies through and get them nice and soft.



Pour into the bowl and serve...... cos what you want is a quick lunch and not some faffy dinner party deal ... right?



Fancy ringing the changes with your magic powder ... how about some of these?


CREAM OF CHICKEN

Substitute the water with chicken stock and a small handful of chopped chicken scraps. Honestly, it tastes even better than the Campbell's stuff.


CREAM OF ASPARAGUS

Two spears of asparagus sliced finely


CREAM OF MUSHROOM

Four mushrooms chopped finely.


CREAM OF BROCCOLI AND CHEESE

Two cooked broccoli florets and a half cup of grated cheese.



Told you - this is not fancy fare, but a filling, satisfying lunch made from storecupboard ingredients and a handful of something tasty!
